Varieties with the Hilbert property

I am going to show some recently found examples of varieties with the Hilbert Property. In particular, I shall talk about how elliptic fibrations on surfaces play a role in this, providing examples of K3 surfaces with the Hilbert Property. This ideas first came up in a recent paper of P. Corvaja and U. Zannier.
